Audio streams to a speech-to-text service for the few seconds it takes to turn into text — then the audio itself is discarded. Only the transcript stays, in your account's private database. Yes. AsideMe is a PWA. On iOS Safari: Share → Add to Home Screen. On Android Chrome: the install prompt appears automatically once you've loaded the page. The installed app gets its own icon, runs in a standalone window, and respects the system theme.
